My boyfriend’s birthday is next weekend and he loves minty-chocolate things. I’ve made him chocolate cake with Andes mint frosting too many times. I have some Thin Mints that I was going to mix in with the cake batter this time, but it just seems like the same old thing.

this depends on how much time you want to put into it, and your “experience level” with making desserts…. im a pastry chef, i got chocolate mint recipes of all shapes and sizes.

are you looking for something quick and easy or really involved?

Oh York Peppermint Patties *drool* THE way to my heart:P Maybe try a chocolate cake infused with melted York Patties, if that is even possible. I am sure katie can confirm that:P

I have a recipe for THE BEST chocolate mint brownies. They might be a bit more complicated than you’re looking for, but they’re SO DELICIOUS. I could seriously eat an entire pan of them.

1 cup flour
1/2 cup butter or margarine
1/2 teaspoon salt
4 eggs
1 teaspoon vanilla
1 can (16 ounces) chocolate syrup
1 cup sugar

Filling:
2 cups powdered sugar
1/2 cup butter
1 tablespoon water
1/2 teaspoon mint extract
3 drops green food coloring

Topping:
1 package mint chocolate chips
9 tablespoons butter

Combine first seven ingredients in a large mixing bowl. Beat at medium speed for 3 minutes. Pour batter into greased 9×13 pan. Bake at 350 for 30 minutes (top of brownies will still appear wet). Cool completely. Combine filling ingredients; beat in mixing bowl until creamy. Spread over cooled brownies. Refrigerate until set. For topping, melt chocolate chips and butter over low heat in a small saucepan. Let cool for 30 minutes or until lukewarm, stirring occasionally. Spread over filling. Chill before cutting.

@rachel, I saw a cheesecake with a thin mint crust and that sounds pretty awesome. I can’t remember if he digs on cheesecake or not. I’ll have to find out, because I certainly do.

aw man those brownies sound so good!

i second the peppermint pattys- they are soo easy! a little time consuming, but super easy.

Peppermint Creams

1 egg white
2 C powdered sugar
peppermint oil, to taste
chocolate, for dipping

Whisk the egg white until stiff. Gradually sift in the powdered sugar and mix together to form a firm, pliable mixture. Add the peppermint oil to taste. Lightly dust a cutting board with powdered sugar, and knead mixture for 2-3 minutes. Roll out to ¼ inch thick and cut. Leave on prepared cookies sheet and leave out to dry for about 24 hours. Cover with chocolate.

heres one i just found getting the peppermint pattys recipe:

Grasshopper Pie

1 ¼ C chocolate cookie crumbs
¼ C melted butter
2/3 C milk
25 large marshmallows
2 T crème de menthe
2 T crème de cacao
1 C heavy cream
Grated chocolate, for decoration

Mix cookie crumbs and melted butter and press into bottom of 9-inch pie pan. Bake at 350 for 10 minutes. In a double boiler, melt milk and marshmallows until smooth and creamy. Cool. Stir in liqueurs, mixing well. Whip the cream and fold in gently, being careful not to over mix. Spread into prepared pie pan. Cover and place pie in the freezer for 3 to 4 hours. Garnish with grated chocolate.

its like the drink, kinda.. so just sub in mint chocolate cookies for the crust, use chocolate marshmallows, or fold in a bunch of chocolate chips…

alright, and if you wanna get really fancy-

Savoy Hotel Soufflés

28 soufflés
400 convection
7-8 minutes

3 C milk
8 oz butter
4 oz b flour
12 egg yolks
24 egg whites – 1 egg white per 4 oz mold
sugar, tt
flavoring, tt

Grease molds- butter and sugar for sweet soufflés, butter and flour for savory. Use butter that is soft, but not liquid. Grease the molds very well or the soufflé will not rise evenly. Make a roux with the butter and flour. Add the milk to make a béchamel. It will look like white pastry cream. Add the yolks gradually. (This mix can be fridgerated for 3 days, but warm it up before using it if you refrdgerate it) Add flavoring. White the egg whites with sugar, to taste, until it is lightly sweet. Temper the whites into the other mixture. Add the rest, and fold gently. Fill the molds to the top. About half way through cooking, take out of the oven and sprinkle with powerdered sugar.

one of my classmates used this to make mint choc souffles with creme de menthe and chocolate chips. they were amazing!

mmm.. i have to say, chocolate and mint is like my number one favorite combo ever. i like your boyfriend. lol

Wow – All of these sound SUPER good!! My contribution really isn’t a dessert, but I thought I’d share anyway. It’s not really even a recipe, so the proportions are really whatever your particular tastes feel like that day :)

Minty Milkshake Deliciousness

A couple of scoops of Vanilla Ice Cream
4-6 Mint Oreos
4-5 ice cubes
Milk – as much as needed for desired consistancy

I’ve also tried it with Cookies N Cream ice cream and/or have added a couple splashes each of Creme de Menthe and Creme de Cacao for a grown-up version. SO GOOD! I’m sure you could substitute Thin Mints for the Oreos, altho I’ve never tried that.

something more, this one time i had a gelatini. like a cross between gelato and a martini. it was chocolate covered strawberry, and OMG. your milkshake idea reminds me of it. yumm!!!!

but my electric mixer crapped out halfway through so I couldn’t get the eggs whipped enough to give it the mousse-like texture. Instead they are more like heavy pudding, but they are still tasty and I’m sure he’ll enjoy them.

I am definitely saving some of your ideas for the years to come!
