    I got an Instant Pot for Christmas. I used it for the first time last night, making Beef Stroganoff, which was great…but definitely more work than what I’d typically like to put in on a weeknight (browning the meat first, in batches, was the issue). So talk to me about your experiences and what quick, go-to meals you prepare in it for weeknight meals!

    We love to make our rice in it. Best thing ever.

    We also make some quick chicken breasts in it too. We haven’t gotten too adventurous but there’s a ton of recipes. We’re always on the go. Chicken breast (not too thick) and set it on poultry and go set the table/shower quick and come back and it’s done.

    Thanks for that! I wasn’t thinking of quick meals like that, but I should. Do you just make a batch of rice and then reheat it with meals?

    I have been scouring Pinterest, too. This definitely feels like a cult following!

    I got an Instant Pot, too! I haven’t tried mine out yet, but am excited to do so soon. So I’m interested in everyone’s favorite recipes as well.

    @Copa I had to really gear up to use it the first time. I’ve never felt so intimidated by an appliance! But I am excited by the possibilities.

    @lianne I had to gear myself up to use it too. Got it last year as a birthday gift but I haven’t used it much, still. I first used it to slow cook…turns out the “low” slow cook setting is more a “keep warm” setting. I think the medium setting is equivalent to low on a normal slow cooker. I’ve used it to pressure cook 2 or 3 times and I’ve been happy with the results. I love my slow cooker so much though, I feel like I’m not going to use the Instant Pot as much!

    I did also just get an air fryer for Christmas which I’m excited to try.

    I got one for Christmas as well and used it for the first time last night to make this: https://www.platingsandpairings.com/instant-pot-cheesy-southwestern-lentils-brown-rice/ for lunches and it was amaaaaaazing! One hour from prep to fully cleaned up, with much less baby-sitting than if I did it on the stove= I’m a happy camper! I look forward to trying other things!

    Awesome @lady! I will pin this. I am hoping to find some that are 30 mins or less, prep to table, for weeknights, but love this for a quick weekend meal…or I could even chop everything I need on the weekend for meals and then have ready to go on weeknights.

    I was thinking we could use this thread to post great recipes we find to share with other Instant Pot users…here’s the beef stroganoff I made on Monday: https://www.baconismagic.ca/russia/instant-pot-beef-stroganoff/. It was soooo good…the other thing I loved about using the Instant Pot for it, besides how fast it was, is the stew beef, which I find to typically be tough, was falling apart tender. Cheap meat, made to seem like a better cut = win!

    I don’t have an Insta Pot, but I wanted to say for me, prepping vegetables on Sunday afternoon makes my weeknight cooking SO MUCH EASIER. If I’m just cutting and washing vegetables, it takes me about an hour. If I’m also cooking Sunday night dinner, or making soup for lunches, or both I’m in the kitchen about two hours on Sunday. Maybe 2.5.

    I’ve had one for about half a year now and LOVE it. My favorite things to make in it are rice, chicken breasts (I make a bunch at once, shred, and then freeze for later use in other recipes to cut down my cooking time), hard boiled eggs, macaroni and cheese, and cheesecake.

    There are many different recipes for the mac n cheese and the one I use I just kind of created myself, so I don’t have a link for it.
    I’m so happy so many people are getting these IPs because now people can understand what I’ve been going on and on about for the past half a year. I use mine anywhere from 3 to 10 times a week.
